Joining The Xara Palace from Ireland in 2018, Aodhán’s passion for food began at a very young age, watching his mother cook and experiment in the kitchen on a daily basis. Developing a love for coffee and working as a barista during his adolescence, coupled with his memories of food growing up helped him find his passion for food and service.
Working previously in a Realis & Chateaux in Ireland, ‘The Park Hotel Kenmare’, Aodhán began to refine his skill set in restaurant service and taking on a new found interest in wine, whiskey and cocktails. He began to explore the world of wine with the sommelier and whiskeys from the hotels renowned whiskey selection. Eventually inspiring him to study under the WSET and take on the role of sommelier in The Xara Palace.
Implementing all he has learned he takes pride in trying to create a wine and bar list which as much as possible tries to focus on smaller producers and often drawing on childhood memories for garnishes and wine pairings.
